Class 3 of Cooking Up a Blue Storm! Cook along as Yanina makes some wonderful dishes inspired by her garden.

100% of proceeds benefit Sara Rodriguez (Wisconsin Assembly District-13).

Garden to Table with Yanina Maloney

Yanina will demonstrate a bell pepper chutney appetizer, gazpacho, turmeric garlic chicken and roasted peach feta salad.

$25 per person for this class, or $60 for the remaining 3 classes in the series.
All proceeds will go to Sara Rodriguez (Wisconsin Assembly District-13).

Ingredients and Shopping List:

Bell pepper Chutney

  1. Olive oil
  2. 1.5 lb red/orange/yellow bell peppers cored and sliced into ¼ inch strips
  3. 1 large onion sliced
  4. brown sugar
  5. Salt and freshly ground Pepper
  6. Balsamic vinegar
  7. 5 cloves garlic crushed
  8. 1 lemon

 

Lemon garlic Chicken strips:

  1. 3 skinless, boneless  chicken breasts cut into ½ inch strips
  2. ⅓ cup  of oil for frying

 

Chicken Marinade

  1. 3 garlic cloves, minced
  2. 1 lemon juiced
  3. ground turmeric
  4. olive oil
  5. kosher salt
  6. Yogurt sauce(optional)
  7. ⅓ cup yogurt (Greek)
  8. 1tbsp of fresh italian parsley , finely chopped

 

Summer Peach salad with feta

  1. 2 ripe but firm freestone Peaches pitted and halved
  2. 10 oz summer greens salad mix
  3. 1 shallot sliced
  4. ¼ cup feta cheese (I prefer French)
  5. Olive oil

 

Dressing

  1. dijon mustard
  2. olive oil
  3. 1 tbsp lemon Juice
  4. Rice vinegar
  5. honey or agave

 

Toppings

  1. ½ cup toasted slivered almonds

 

Gazpacho soup (Serves 8)

  1. 2 lbs tomatoes cored and chopped
  2. 2 C plain nonfat yogurt (Greek is best)
  3. 3 scallions white and light green parts chopped
  4. 3 cloves garlic chopped roughly and sauteed in olive oil until light brown (be careful not to burn).
  5. 20 basil leaves washed and chopped roughly
  6. 4 ice cubes
  7. Red wine vinegar
  8. kosher salt
  9. Cayenne pepper or 1/2 jalapeno pepper
  10. Black pepper
